With Valentine’s Day just around the corner, I wanted to share a special recipe that captures the sweetness of the season—Strawberry Buttercream Cookies. These cookies are the perfect way to celebrate with loved ones, combining the bright, fruity essence of strawberries with the richness of a buttery, airy frosting. Using flour made from high-quality wheat berries enhances the flavor and texture, bringing a fresh, nutty sweetness that pairs beautifully with the lightness of the buttercream.

Preheat oven to 350°F and line a baking sheet with parchment paper
Add 1 cup freeze-dried strawberries to a blender and blend until you have a fine powder. Small chunks are okay.
In a medium bowl, combine flour, strawberry powder, baking powder, baking soda, and salt.
In a stand mixer, cream butter and powdered sugar until light and fluffy.
Add egg, oil, and vanilla to the butter mixture and beat until combined.
Slowly add the flour mixture to the wet ingredients until just combined. The dough will be soft.
Using a cookie scoop, add dough to the prepared baking sheet.
Bake cookies for 12-14 minutes, depending on your oven, until edges are set. Allow them to cool on the baking sheet for 2 minutes before transferring to a wire rack. Cool completely before adding buttercream frosting.
Strawberry Buttercream
Add ½ cup freeze-dried strawberries to a blender and blend to a fine powder.
In a medium bowl, use a hand-held or stand mixer to cream the ½ cup butter.
Add in the powdered sugar, vanilla, milk, and salt. Mix until smooth.
Add the strawberry powder and mix until well combined.
Spread on cooled cookies and top with freeze-dried strawberry crumbles.
Store at room temperature, covered tightly, for up to 5 days. If you choose, you can freeze cookies for up to 3 months.
