Ingredients
- 1 cup chickpea flour
- ½ cup almond flour
- ½ cup unsweetened cocoa powder
- ½ cup butter
- 1 cup sugar
- ¼ tsp salt
- ¼ tsp baking powder
- ¼ tsp baking soda
- 1 egg
- 2 tsp vanilla
- 24 undrained maraschino cherries
- ½ cup sweetened condensed milk
- 1 6 oz package semi-sweet chocolate chips
Directions
- Preheat oven to 350 degrees.
- In a large mixing bowl coming flour and cocoa. Set aside.
- In a large mixing bowl cream the butter until soft.
- Add sugar, salt, baking powder and baking soda. Beat until well combined.
- Add egg and vanilla, beat well.
- Gradually stir in flour mixture, until combined.
- Shape dough into 1 inch balls and place on un-greased cookie sheet. Press down center of each ball with back of a ¼ tsp, to create a divot for the cherry.
- Drain cherries, reserving the juice. Place a cherry in each cookie. Set aside.
- In a small sauce pan combine chocolate pieces and milk. Heat until chocolate is melted. Stir in 4 tsp of remaining cherry juice. Spoon 1 tsp of chocolate sauce over cookies.
- Bake for 10 minutes. Cool and enjoy!
