Indulge in the rich, zesty flavors of homemade Black Bean Dip crafted from scratch using dried black beans. Ingredients

2 cups dried black beans

Water as needed to soak, cook, and blend black beans

¼ cup olive oil

2 small yellow onions, chopped

2 tbl garlic, minced

2 jalapeño peppers, seeded and chopped

2 tsp salt

½ tsp cumin

1 lime, juiced

Cilantro or cotija as garnish (optional)
Directions
Rinse black beans. Soak overnight, covering in 2 inches of water.
Next day, drain and rinse.
Place soaked beans in a large pot and cover with water (about 2 inches above the beans). Bring to a boil, then reduce heat to low and simmer, partially covered, 60-90 minutes or until beans are tender. Add water as needed to keep beans submerged.
Drain beans and set aside.
Add oil to a medium-size pan and set burner to medium. Sauté onions, garlic, and jalapeños for 10 minutes or until very soft.
Transfer sautéd onions, peppers, and garlic to a food processor. Add black beans, salt, cumin, lime juice, and water. Blend until smooth, adding more water or lime juice as needed to achieve desired texture.
Serve warm or cold with tortilla chips or on tacos and burritos.
Optional: garnish with cilantro or cotija.
