Ingredients
- 2 cups dried black beans
- Water as needed to soak, cook, and blend black beans
- ¼ cup olive oil
- 2 small yellow onions, chopped
- 2 tbl garlic, minced
- 2 jalapeño peppers, seeded and chopped
- 2 tsp salt
- ½ tsp cumin
- 1 lime, juiced
- Cilantro or cotija as garnish (optional)
Directions
- Rinse black beans. Soak overnight, covering in 2 inches of water.
- Next day, drain and rinse.
- Place soaked beans in a large pot and cover with water (about 2 inches above the beans). Bring to a boil, then reduce heat to low and simmer, partially covered, 60-90 minutes or until beans are tender. Add water as needed to keep beans submerged.
- Drain beans and set aside.
- Add oil to a medium-size pan and set burner to medium. Sauté onions, garlic, and jalapeños for 10 minutes or until very soft.
- Transfer sautéd onions, peppers, and garlic to a food processor. Add black beans, salt, cumin, lime juice, and water. Blend until smooth, adding more water or lime juice as needed to achieve desired texture.
- Serve warm or cold with tortilla chips or on tacos and burritos.
- Optional: garnish with cilantro or cotija.
