Ingredients
- 1 cup pinto beans
- Water as needed
- ½ cup onion, diced
- 1 tbl olive oil
- 1 clove garlic, minced
- Salt to taste
- Herbs and juices as desired, such as cilantro and jalapeño juice
Directions
- Rinse pinto beans in a colander, removing any unwanted debris or pieces that may be in the bag.
- Add the beans to a large pot, cover with water and soak overnight.
- Next day, drain beans and cover with 2 inches of new water. Heat to a simmer and cook until soft (about 45 minutes).
- While beans simmer, heat oil in saucepan and sauté onion and garlic.
- Once beans are soft, drain and combine with onion-garlic mix, salt, and any other additions.
- Mash or blend the mixture to desired texture.
