Ingredients
- 3 cups of multi purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tbs pumpkin spice
- ½ tsp salt
- ½ cup butter, room temperature
- 1 cup granualted sugar
- ½ cup brown sugar, packed
- 1 15 oz can pure pumpkin puree
- 1 large egg
- 2 tsp vanilla
- ½ cup butter
- 1 cup brown sugar
- ¼ cup heavy cream
- 2 cups powdered sugar
Directions
- In a medium bowl whisk together dry ingredients.
- Preheat over to 350 degrees and grease cookie sheets.
- In a large bowl cream together butter and sugars until light and fluffy. Add pumpkin, vanilla and egg and cream until combined.
- Add dry ingredients and stir until just combined. Use a scoop and place cookies 2-3 inches apart.
- Bake for 12-15 minutes. Let cookies cool completely and then frost.
- In a medium sauce pan melt butter and boil for 2 minutes. Stir in brown sugar, reduce heat and continue to let boil for 2 minutes.
- Stir in heavy cream. Remove from heat and pour into large bowl, stir in powdered sugar.
- Frost cookies and enjoy!
