There are so many great lentil salads but this one caught our eye for it's fresh and simple ingredients. This lentil salad by Two Peas & Their Pod is made from the more peppery green lentils with the crunch of the cucumbers and the sweetness of bell peppers. A great lunch idea or side dish. This hearty salad by Eating Well makes a great option for Father's Day. Hearty with Wheat Berries and Chickpeas, this salad also adds a little extra flavor depth with feta cheese. Who doesn't love the extra little salty "pop" of Feta in their salads? If you want to keep it vegan, try a vegan feta option. Can't help but share our very own Black Bean Burgers, as we think they are pretty darn good and will impress any dad (or anyone) out there. These black bean burgers hold their shape really well thanks in large part to the dense texture of the dried black beans. The best part about these burgers is that they are so quick and easy.
