Hummus and Summer Squash Grilled Pizza

Ingredients

  • 2 cups whole wheat white bread flour
  • 1 packet instant yeast
  • ½ tbs sugar
  • 1 cup warm water
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 2 tbs olive oil
  • 1 cup dried chickpeas
  • 6 cups water, divided
  • ⅓ cup reserved cooking water
  • 4 tbsp caramelized garlic olive oil
  • 1 tbs lemon juice
  • 2 tsp salt
  • 1 zucchini, sliced
  • 1 red bell pepper, diced
  • 1 orange bell pepper, diced
  • ½ red onion, sliced
  • 2 tsp olive oil
  • salt and pepper

Directions

  1. Combine water, sugar and yeast. Let sit for 5 minutes.
  2. Add flour, oil, spices, and salt. Mix until dough forms.
  3. Once you have a nice ball, brush a oil over the top. Cover and let rise for 30 minutes.
  4. Once dough has doubled in size. Roll it out to ½ inch thickness.
  5. Spray dough with oil to prevent sticking. Place on 400 degree grill for 3 minutes. Flip the dough and cook for another 3 minutes.
  6. Remove Dough from grill.
  7. Soak chickpeas in 2 cups of cool water overnight for 6-8 hours.
  8. Rinse beans and discard water, place beans in a pot, cover with 3 cups water and boil for 1 hour.
  9. Set aside cooking water. Rinse beans under cold water for 2 minutes.
  10. Remove skins from chickpeas.
  11. Place remaining ingredients in a food processor. Process until smooth, gradually adding reserved cooking water until hummus reaches desired creaminess.
  12. Toss vegetables in oil and season with salt and pepper.
  13. Grill at 400 degrees for 15 minutes.
  14. After crust cools a bit, layer on garlic hummus and grilled veggies. And enjoy!

Why remove the husks from chickpeas?

I run the food processor until it smooth. And by smooth, i mean it has a little texture.

It does not take away from the hummus at all.

Also surprised you do not have tahini or cumin. Not surprised you do not have hot sauce but it does add to the hummus. Have added za’atar instead of cumin which is also good.

But, whatever recipe is used, your chickpeas are a must!

I wish the recipes were given in grams—especially the flour because measuring can easily differ by 30%.

Could you make the crust for this with garbanzo flour? Like a socca type recipe? That way it’d be gluten free too…
