Green split peas are a variety of field pea, that we grow specifically for drying and spitting. Split peas can be either yellow or green, on our farm we grow green split peas. After harvesting the green split peas, we then hull them and naturally split them in half along their natural seam. Splitting the peas encourages faster cooking times and negates the need to soak the beans before cooking. Green split peas can be stored in an airtight container for over three years. They need to be stored in the dark as florescent and incandescent lighting can bleach the split peas of their colors.
