Preheat oven to 500 degrees and place rack on the bottom rung of your oven.
Sift together 2 cups of flour and the yeast. Add water and salt and mix well.
Gradually add in the remaining flour a little at a time, until the dough begins to clean off the sides of the bowl. When this happens, stop adding more flour in the bowl.
Knead the dough for 4-5 minutes adding just enough extra flour so the dough is not sticking to the working surface. Add any herbs or spices to knead in at this time.
Form dough into 9-10 balls.
On a floured surface, roll each ball into a 5-6 inch round, about ¼ inch thick to create the pitas. Sprinkle with enough flour to prevent sticking. Place a non-stick baking sheet or lightly spray the baking sheet with coconut oil. Let the pitas rise for 30 minutes, or until slightly raised, then turn over and bake.
Bake on the bottom rack of the oven for 5 minutes. The instant hot heat will help them puff up and give the exteriors a little color.
When you remove the pitas from the oven they will be fairly hard, but will soften as they cool. Place them in an airtight container while still warm and allow them to cool.
Cut the pitas in half crosswise and stuff them with your favorite fillings.
Pitas can be reheated in the microwave or for a short time in the oven at 350 degrees until just warm.
