I am super excited to introduce and be a part of this 5-part summer series, where I’ll be sharing some of my favorite recipes featuring Palouse Brand’s high-quality legumes and wheat berries. From appetizers and refreshing salads to homemade bread, a hearty main dish and even dessert, I can’t wait to share how versatile these pantry staples can be.

Why I love cooking with legumes
Legumes are one of the most nutritious and affordable foods you can keep stocked in your pantry. I love the fact that they can make a variety of meals. Why use dry chickpeas?
While canned chickpeas are convenient, I almost always reach for dry chickpeas when I have the time. Cooking them from dry gives you better flavor and a creamier texture while still allowing the chickpeas to hold their shape. You also have complete control over the cooking process, so they aren't overly soft or mushy. Dry chickpeas are a pantry staple with a long shelf life, making them an economical option to keep on hand for quick meals. Whether you're making salads, soups, hummus, or appetizers like this one, starting with high-quality dried chickpeas is well worth the little bit of extra planning.
Are chickpeas healthy?
Absolutely! Chickpeas, also known as garbanzo beans, are incredibly nutritious. Not only are they a great source of plant protein and fiber, but chickpeas are also rich in a variety of vitamins and minerals such as manganese, folate, copper, iron, zinc, phosphorus, magnesium, and vitamin B6.

Marinated Chickpeas with Whipped Feta
If you’re looking for a simple appetizer that’s perfect for summer, this Marinated Chickpeas with Whipped Feta is definitely one of my favorites. It’s fresh, light, and the flavors come together beautifully. Sweet, savory, creamy… It’s the best!
The creamy whipped feta pairs perfectly with the marinated chickpeas, creating an appetizer that’s both satisfying and refreshing. Serve it with a toasted baguette, crackers, pita bread, fresh vegetables—or, honestly, just the chickpea mixture spooned on top of the whipped feta by itself is delicious, too! Luckily you have tons of different options for how to serve and what you prefer! This appetizer is perfect for backyard barbecues, potlucks, holidays, or just a simple patio snack on a summer day. It pairs beautifully with grilled chicken, steak, or salmon, and makes a wonderful addition to a charcuterie board or summer mezze platter.
Made with wholesome Palouse Brand Chickpeas, this recipe is a delicious way to enjoy the nutrition and versatility of the legume while celebrating the fresh flavors of summer. This recipe is quick to prepare and easy to make ahead.

Ingredients
- 3 c (560g) Palouse Brand Chickpeas, prepared
- 3 Tbl avocado oil
- 1 tsp dried oregano
- ½ tsp smoked paprika
- 3 Tbl fresh cilantro
- Salt and pepper to taste, about ½ tsp of each
- 8oz (1 block) feta cheese, drained
- 4oz (½ block) cream cheese
- ¼ c (50g) plain Greek yogurt, drained of excess liquid
- 1 clove garlic, minced
- Zest of ½ lemon
- 1 Tbl (20g) honey
- Water as needed, about ¼ c
Directions
- In a medium bowl toss together all the ingredients for the Marinated Chickpeas. Mix well to ensure all the chickpeas are well coated. Cover and place in refrigerator while you prepare the whipped feta. (Tip: do this the day before—the longer the beans marinate the better the flavor!)
- Add all ingredients for the Whipped Feta to a food processor.
- Blend together until smooth and creamy.
- If the mixture seems too thick, add water a little bit at a time and blend again until the desired texture is reached.
- Taste as you go and adjust seasonings to your preference!
- Spread a generous layer of the whipped feta onto a serving platter or shallow bowl
- Spoon the marinated chickpeas over the top.
- Garnish however you like! For a touch of sweetness I recommend extra chopped cilantro, a pinch of red pepper flakes, and a drizzle of honey. Or a drizzle of avocado oil, some cracked pepper, and a light dusting of smoked paprika will give you a savory finish.
- Serve with warm pita bread, toasted baguette slices, crackers, or an assortment of fresh vegetables for dipping.
