Welcome back! Over the course of this five-week series, I'm sharing everything from appetizers to desserts to inspire you to use Palouse Brand's premium legumes in fresh, seasonal ways. The perfect summer salad

One of my favorite things about creating summer dishes is how simple they can be. There's nothing like walking out to your backyard garden during peak harvest and knowing that no matter what you pick, it doesn't take much to turn those fresh ingredients into something absolutely delicious.

I know not everyone has a garden, and that's okay! Don't let that stop you from enjoying recipes like this. Visit your local farmers market, support a nearby farm stand, or simply grab whatever fresh, seasonal produce looks best at the grocery store. Crisp cucumbers, sweet cherry tomatoes, fresh parsley, red onion, and tangy pickled banana peppers come together to create this salad that's colorful, refreshing, and packed with fresh summer flavor.

To make this salad even more satisfying, I love adding Palouse Brand Chickpeas and Clear Creek Black Beans. Not only do they add plenty of plant-based protein and fiber, but they also turn a simple vegetable salad into a hearty meal. One of the reasons I know I'll be making this salad on repeat is because it starts with ingredients I almost always have on hand. During the summer, the fresh vegetables might change depending on what's growing in the garden or what's available at the farmers market, but I always like having quality pantry staples ready to go.

Tangy Chickpea & Black Bean Salad

I love a good salad that’s both fresh and filling and this salad checks both boxes. The crisp and crunchy vegetables, creamy mozzarella pearls, and the hearty chickpeas and black beans are all tossed together in a tangy vinaigrette that pulls everything together. It’s so pretty and colorful and refreshing, and one of those dishes that fits just about any summer meal.

Ingredients

  • 2 medium (320g) English cucumbers, sliced and chopped into quarters
  • ½ cup (80g) cherry tomatoes, quartered
  • ½ red onion, chopped
  • ½ cup (85g) pickled banana peppers, roughly chopped
  • ¼ cup (5oz) fresh parsley, chopped
  • 1 ½ cup (225g) prepared Palouse Brand Chickpeas
  • 1 ½ cup (185g) prepared Clear Creek Black Beans
  • 8oz package mozzarella pearls, drained
  • ⅓ cup (3 fl oz) avocado oil
  • ¼ cup (2 fl oz) red wine vinegar
  • 1 Tbl dijon mustard
  • 1 ½ tsp (12g) maple syrup
  • Splash of banana pepper juice

Directions

  1. Gently mix all salad ingredients in a large bowl.
  2. Add all vinaigrette ingredients to a glass quart jar or pint pitcher and whisk together.
  3. Continue to stir the mixture as you pour it over the salad. Toss everything to ensure each bite is dressed.
  4. Taste test and add salt and pepper if desired, or add more maple syrup to make it a little more sweet.
  5. Enjoy right away or store in the fridge for at least an hour.
