How To?
Sprouting lentils is a simple and rewarding process that enhances their nutritional value and makes them easier to digest. To begin, rinse the lentils under cool water to remove any dirt or debris. Then, place them in a jar or bowl and cover them with plenty of water, about 2-3 inches above the lentils. Let them soak for 8-12 hours or overnight to soften them and start the sprouting process. After soaking, drain the lentils and rinse them well under cool water, ensuring they are thoroughly drained.

Next, leave the jar with the drained lentils in a dark, warm spot, around 65-75°F (18-24°C), for the next 2-4 days. During this time, you’ll need to rinse and drain them 2-3 times a day to keep them moist and promote sprouting. In about 2-4 days, tiny white tails will begin to form at the ends of the lentils, indicating that they are ready. You can stop the process once the sprouts have grown to your desired length, typically around 1/4 to 1/2 inch (1 cm).

What Do I Do After Sprouting?
Once the lentils have sprouted, give them one last rinse, drain them thoroughly, and store them in an airtight container in the refrigerator. They can last for 3-5 days when kept properly. Sprouted lentils have a mild, fresh scent and a crunchy texture, making them a great addition to salads, wraps, soups, and other dishes. The sprouting process boosts the nutrient content, and improves the bioavailability of minerals such as iron and zinc. It also makes the lentils easier to digest by breaking down starches and neutralizing phytic acid, which can inhibit mineral absorption. With just a little time and effort, you can enjoy fresh, nutrient-rich sprouted lentils as part of a healthy diet. Try this recipe first!
