"Oh my gosh!!! I love milling my own flour, and I had researched buying whole wheat berries on line. I have to say, from all of the research that I did, Palouse had the highest customer rating/review status of any company out there. I do realize that I had to ‘see for myself’, so to speak. Well, Palouse has my EXTREME vote of confidence. I tell everyone about “this company I found online”, and my friends trust my research skills, since that’s what I do for a living, and now they order from you too. Now I love the way my breads turn out. I made waffles the other morning, and my husband took one bite, and said, this tastes better, why? I smiled and said, fresh milled flour. He said, why didn’t you buy a mill and wheat berries sooner? 🤣. I give Palouse my 10 Large Loaves rating……that means GREAT!!"

Q&A

Hard Red Winter Wheat Berries' Protein Content Hi, I have some of your fine looking wheat berries on the way to me. I have a question about the stated protein content. You have 7 grams of protein listed for 45 grams of berries. Let's call that 14 grams protein per 100 grams. On "nutritionvalue.org, it says that 100 grams of "wheat, sprouted" is 7.5 grams of protein. That is about 1/2 of the protein you claim. I plan to sprout these berries. I'm puzzled as to what the actual protein content of my essene bread will be. Can you help me understand protein content of wheat berries? I found a recipe for essene bread which calls for 3 cups berries, 3 cups water. They are telling me that there will be a 12 portion yield, with 6.1 grams of protein per portion. That would be great if it were true. I see 5 grams of protein per slice as respectable. Six grams would be great. I don't see how it can be true.
Hi, When we have our wheat tested for protein by the USDA for our hard red winter wheat it varies but for this crop year (2021), the protein level was 11.5%.
