Ingredients

  • 1 ½ cups whole wheat flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon
  • ½ cup butter, melted
  • ⅓ cup sour cream
  • ⅓ cup milk
  • ¼ cup brown sugar
  • ¼ cup honey
  • 2 eggs
  • 1 tsp vanilla
  • 1 ½ cup mixed berries, (blue berries, strawberries, raspberries)

Directions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease the tin.
  2. In a separate bowl, whisk together the melted butter, honey, brown sugar, sour cream, milk eggs, and vanilla extract until well combined.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix; a few lumps are okay.
  4. Toss berries in 1 tbs of flour to prevent them from sinking in the batter.
  5. Gently fold in the mixed berries into the batter.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full. If desired, top each muffin with a few additional berries for decoration.
  7. Bake in the preheated oven for about 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  8. Remove the muffins from the oven and let them cool in the tin for a few minutes. Then transfer them to a wire rack to cool completely.
