We partnered with Pullman-based juice bar Larissa's Apron to bring a lentil smoothie to our community for the month of August. Us local yokels have been enjoying it for weeks and now those of you who live farther afield can make it at home, as well!
Pullman is home to the National Lentil Festival and Larissa developed this treat to show yet another way to enjoy this tiny yet powerful legume. Cooked brown lentils have a mild, earthy flavor that disappears into the fruit while giving the smoothie an unexpected plant-based twist. Blue spirulina gives this snack its fun, vibrant color, making it as eye-catching as it is delicious.

Lentil Fest Fuel
Healthy Smoothies
For a thicker, frostier Lentil Fest Fuel, use all frozen fruit. For a sweeter smoothie, add a little extra agave. And for a thinner, more drinkable consistency, simply blend in additional oat milk.
Meal-prep tip: Cook the lentils ahead of time and refrigerate them once cooled. Since the smoothie only uses a small amount, one batch of cooked lentils can be used for more smoothies as well as salads, veggie bowls, wraps, soups, and other meals throughout the week.
Ingredients
2 Tbl Palouse Brand Brown Lentils, prepared and cooled
1 c. unsweetened oat milk
1 Tbl agave or honey
½ banana
½ c. strawberries
¼ c. blueberries
1 tsp blue spirulina
Pinch of salt
Directions
Add all ingredients to a blender or food processor and whiz it up! Pour into your favorite glass and add a WIDE straw—this one has some body to it!
