Ingredients
- 1 cup Palouse Brand Green Split Peas
- 2 cups low sodium vegetable stock
- 5 cups medium bok choy, chopped
- ¼ cup cilantro, chopped
- 1 medium onion, thinly sliced
- 1 small can water chestnuts, sliced
- 1 tbsp. grated fresh ginger
- 5 cloves garlic, minced
- ½ tsp. turmeric
- 2 green chilies, minced
- 1 tsp. fresh ground black pepper
- 1 tsp. mustard seeds
- 2 tbsp. extra-virgin olive oil
Directions
- Place green split peas in a saucepan and cover with water. Bring to a boil, reduce heat and simmer 20 minutes until tender. Drain and set aside.
- In a large frying pan or wok, heat olive oil and mustard seeds over medium heat, stirring continually.
- Add onions and continue stirring until translucent.
- Add green chilies, ginger, and garlic, stirring for 1 minute. Then stir in turmeric and pepper.
- Add 1 ½ cups vegetable stock and prepared green split peas.
- Bring to a boil for 5 minutes, then cover and simmer for 25 minutes, stirring occasionally.
- Add ½ cup vegetable stock, bok choy, water chestnuts, and cilantro. Cover and stir occasionally until greens are soft. About 2-3 minutes.
- Add salt to taste and serve over rice.

Delicious! Addicting! We are not vegetarians,still we loved this dish and will make it a staple in our house! The bok Choy was so refreshing and the split peas also!
We had never experienced split peas used as in this dish. Texture and taste so different from the iconic split pea soup! Soooo glad that I found this recipe here and followed through making it! (You know what I mean all you kindred recipe collectors!:)!)
