Ingredients
- 4 medium sweet potatoes
- 4 tsp olive oil
- 3 cups cooked black lentils
- 1 cup tomato sauce
- 1 tbs chili powder
- ½ tsp cumin
- ½ tsp onion powder
- ½ tsp garlic powder
- ¼ tsp salt
Directions
- Preheat over to 400 degrees.
- Wash potatoes, poke 3 or 4 times with a fork, rub with oil and bake for 50-60 minutes until tender.
- While potatoes are baking, prepare lentils.
- When lentils are cooked add, tomato sauce, chili powder, cumin, onion powder, garlic powder, salt.
- Simmer uncovered on medium-low for 5 minutes to develop flavors.
- When potatoes are done, split them down the middle slightly mashing the inside. Fill with lentils. Top with cheese, guacamole, sour cream, lime juice or cilantro.
