Lemon and Garlic Hummus

Ingredients
¾ cup Palouse Brand Chickpeas
3 cups water
2 tbsp. olive oil
1 tsp. minced garlic
2 ½ tbsp. fresh squeezed lemon juice
1 pinch of kosher salt
1 ¾ tbsp. sesame seeds
¾ tsp. salt
½ tsp. garlic powder
¼ tsp. cumin
Directions
Soak chickpeas in cool water 6-8 hours or overnight.
Rinse beans and discard water, place beans in a pot and cover with 3 cups, cover and boil for 1 hour.
Set aside cooking water. Rinse beans under cold water for 2 minutes.
For extra creamy hummus remove the chickpea skins.
Place sesame seeds in a food processor, turn on, and slowly add olive oil until seeds are moistened.
Place all ingredients in the food processor and process until smooth. Garnish with a few chopped green onions, thinly sliced cucumber chips or pine nuts.
