Yellow Split Pea Soup

Soup is always a great go to for a cold gloomy day and this yellow split pea soup is no different. They have a mellow, buttery flavor in contrast to the green split pea’s very sharp flavor and their golden color is beautiful to look at. Yellow split peas are incredibly versatile, we’ve even tried substituting them for corn and they are amazing in that regard. 

This delicious soup is full of nutrients as yellow split peas are full of protein, fiber, and especially rich in potassium. Ingredients

  • 1 ½ cups Clear Creek Yellow Split Peas, rinsed
  • 1 tbsp. vegetable oil
  • 1 ½ cups chopped onions
  • 2 cups chopped carrots
  • ¼ tsp black pepper
  • ½ tsp. fine sea salt
  • 7 cups water, divided

Directions

  1. Heat oil over medium-high heat in a large saucepan and add carrots, onion and pepper. Stir frequently for 8 minutes or until vegetables are tender.
  2. Add peas, stir in salt and 6 cups of water while bringing to a boil. Once boiling, reduce heat to medium-low, cover and simmer for 35-40 minutes or until the peas are tender, stirring occasionally.
  3. In a food processor, add 1 cup of the soup solids and the remaining 1 cup of water. Process until smooth and return the puree to the pan. Simmer for 5 minutes, stirring often in order to mix the flavors completely. If the soup is too thick you can thin it by adding more water.
