Mediterranean Chickpea Soup

While this has been a warmer Fall than most, that doesn’t mean it can’t still be time for delicious soups to warm up your soul. We love this Mediterranean Chickpea Soup for just that reason. Chickpeas are a great addition to any soup - they are packed with nutrients like protein, potassium, and calcium. Our beautiful chickpeas and their creamy color pop against the red coloring of not only the crushed tomatoes but also the sweet potatoes and red peppers.

This chickpea soup is not only a super easy recipe but it is also a vegetarian recipe! The hardest part of this recipe is remembering to soak your chickpeas the night before. Then after cooking your chickpeas, all you have to do is toss them into the mix with the rest of all these delicious ingredients and let the flavors simmer together for just 35 minutes.

Ingredients

  • 3 TBS Olive Oil
  • 1 Sweet Potato, diced
  • 1 Onion, diced
  • 2 Celery Stalks, diced
  • 2 Red Peppers, diced
  • 3 Garlic Cloves, minced
  • 1 TBS Grated Fresh Ginger
  • 2 Cups Cooked Chickpeas
  • 1 tsp Coriander
  • 1 tsp Cumin
  • 1 tsp Turmeric
  • 1 15 oz Can Crushed Tomatoes
  • 6 Cups Vegetable Broth
  • 2 Limes, Juiced
  • Salt and Pepper to Taste
  • 1 Bunch Parsley

Directions

  1. In large pot, heat olive oil over medium heat. Add potatoes, onions, celery, bell peppers, and spices. Saute, stirring occasionally, for 5-7 minutes.
  2. Add the garlic, ginger and chickpeas and cook for another 5 minutes.
  3. Add the crushed tomatoes and broth. Bring to boil for 5 minutes.
  4. Reduce heat to medium-low, cover and let simmer for 35 minutes.
  5. Remove from heat, add the lime juice and parsley. Enjoy!

This was delicious! Almost everything was a pantry staple! I varied the veggies as to what I had on hand, and it worked marvelously! A friend of mine could use a bit of soup to cheer her up, and this will hit the spot. :)

This soup was so good!! We served it over a pile of sauteed kale, along with some homemade no-knead bread (made with your fabulous winter wheat!). The spices in this soup are delicious, and the parsley at the end is the perfect finish. Didn’t have limes so we used a squeeze of fresh lemon instead and it was great!! These flavors really sing.
