Ingredients
- 2 cups Palouse Brand Red Spring Wheat Berries
- ½ tsp. salt
- 1 tsp. baking powder
- 4 tbsp. cold butter, cut in
- ½ - ¾ cup cold milk
- 1-2 tbsp. extra-virgin olive oil
- Sea salt
Directions
- Using a medium size bowl add the flour, salt and baking powder until mixed well. Cut in the cold butter until fully incorporated. Add cold milk and let it soak in the mixture for a few minutes, then add additional milk if needed and mix together.
- Next, place the dough on a lightly floured surface and knead for a few minutes. Divide dough into equal pieces making individual dough balls, place on a spare plate and cover with a slightly dampened tea towel.
- On a floured surface, take each dough ball and flatten out with a lightly floured rolling pin until each dough ball is paper thin and somewhat square or rectangle in shape. Using a pastry brush, lightly brush each piece with olive oil.
- Use a sharp knife to shape the homemade tortilla chips by making even cuts to create the size of tortilla chips you want.
- Once all tortilla chips are ready, preheat oven to 350 degrees.
- Transfer cut tortilla chips to a baking sheet and season with sea salt.
- Bake for 11-13 minutes until they begin to turn slightly golden brown on the edges. Let tortilla chips cool and repeat with remaining tortilla chips.

The recipe calls for 2 cups hard red berries, how long do you grind them and what should the flour measure out to?
