Sourdough Granola Bars

Ingredients

  • 1 cup sourdough starter (discard or active)
  • 2 cups rolled oats
  • 1/2 cup nuts or seeds (such as almonds, walnuts, sunflower seeds, etc.), chopped
  • 1/4 cup honey or maple syrup
  • 1/4 cup nut butter (such as almond butter, peanut butter, etc.)
  • 1/4 cup dried fruit (such as raisins, cranberries, chopped apricots, etc.)
  • 1/4 cup chocolate chips or chunks (optional)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Directions

  1. Preheat your oven to 350°F (175°C). Line a baking dish or tray with parchment paper or grease it lightly with oil.
  2. In a large mixing bowl, combine the sourdough starter, rolled oats, chopped nuts or seeds, honey or maple syrup, nut butter, dried fruit, chocolate chips (if using), vanilla extract, and a pinch of salt. Stir until all the ingredients are well combined and the mixture starts to come together.
  3. Press the mixture firmly and evenly into the prepared baking dish or tray. Use the back of a spoon or your hands to smooth the surface and compact the mixture.
  4. Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown and the bars are set in the center.
  5. Remove from the oven and let the granola bars cool completely in the baking dish or tray.
  6. Once cooled, use a sharp knife to cut the granola mixture into bars or squares. You can make them as large or small as you prefer.
  7. Store the sourdough granola bars in an airtight container at room temperature for up to a week. If you prefer a longer shelf life, you can store them in the refrigerator for up to two weeks or freeze them for up to three months.

I’ve made these at least a half dozen times now, usually tweaking the exact formula based on what I have in the pantry. It’s a great base recipe and the bars come out really well. Not overly sweet, but pleasantly so, and pretty tasty. I like knowing exactly what is in there, no more and no less. I tend to use relatively mature discard and never find them tasting too tangy or sour. Excellent granola bar recipe, thanks Palouse team.

Made these today using my whole wheat sourdough starter. Turned out very good! I did let the stqrter ferment overnight.
