Ingredients

  • 2/3 c. Palouse Brand Chickpeas, dry
  • 2/3 c. Clear Creek Kidney Beans, dry
  • 2/3 c. Clear Creek Black Beans, dry
  • 2 English cucumbers, thinly sliced
  • 10 oz grape tomatoes, halved
  • ½ red onion, thinly sliced
  • ½ c. Kalamata olives, pitted and halved
  • 12 oz marinated artichoke hearts, in quarters
  • ½ c. fresh parsley, chopped
  • ¼ c. olive oil
  • Juice of 1 lemon, about ¼ c.
  • 1 tsp sumac
  • 3 cloves garlic, grated
  • Salt and cracked pepper to taste
  • 1 c. crumbled feta cheese

Directions

  1. Cook beans and allow to cool completely.
  2. Combine all salad ingredients in a large bowl.
  3. Mix together the dressing, saving the feta for later, and pour over the salad. Gently toss everything to ensure each bite will be well coated.
  4. Cover and chill, and top with feta cheese before serving.
