Za’atar is a traditional and popular spice blend of the Middle East with a unique zesty flavor made from toasted white Sesame Seeds, Thyme, Sumac, Marjoram, Savory, and Salt. We love this spice blend and couldn’t imagine anything more perfect to pair with hummus!
This recipe is a chopped and layered hummus dip, with lots of texture, Middle Eastern flavor, color, and freshness. The hummus, chopped veggies, cheese and spices work together to make this dip one of the tastiest we have ever had. This is a unique hummus dip recipe that you won’t forget. It is a little zany and a whole lot of deliciousness. We made this garbanzo bean dip with our garbanzo beans right from our very own farm. We would also like to add that using dried garbanzo beans in your hummus gives you a much creamier hummus than using canned. It may take some more time but it is well worth it. By now your taste buds are watering, right?
You may wish to make this hummus extra smooth because of layering it on top of the yogurt, so we suggest you remove as many of the skins as you can. For Step #3, we place the beans in a colander (saving the cooking water of course) and begin to rinse the beans under cool water. We rinse our beans using our water spray unit holding it close to the beans while gently turning the beans with a wooden spoon. The bean temperature change encourages the majority of the skins to loosen and fall off. Then we place the skins on a sheet pan, spread them out, pick out the loose skins and dispose of them, and continue with Step #4 to the end of the recipe.

Ingredients
- ¾ cup Palouse Brand Chickpeas
- 3 cups water
- 2 tbsp. olive oil
- ¼ cup chopped fresh parsley
- 2 tsp. grated lemon peel
- ¼ tsp. kosher salt
- 1/8 tsp. freshly ground black pepper
- ⅓ cup pitted Kalamata olives, quartered
- ½ cup finely crumbled feta cheese
- 1 medium Roma tomato, seeded and diced
- ½ cup diced English cucumber
- ½ tbsp. extra-virgin olive oil
- 2 tsp. Za’atar seasoning blend
- 1 ¾ tbsp. sesame seeds
- ¾ tsp. salt
- ½ tsp. garlic powder
- ¼ tsp. cumin
- 1 tsp. lemon juice
Directions
- Soak chickpeas for 6-8 hours in 3 cups of water. Rinse and discard water.
- Place rehydrated beans in pot cover with 2 inches of water and bring to a boil for 50 minutes
- Drain and set aside cooking water, rinse under cold water for 2 minutes. Remove skins from cooked beans.
- Place sesame seeds and olive oil in a food processor and blend them together.
- Add chickpeas and 1 ½ tsp. seasonings to the food processor and blend. Gradually add some of the chickpea water until the hummus is at the desired consistency.
- To serve up the dip, spread the yogurt onto a small platter.
- Carefully spread out the hummus on top of the yogurt.
- Then sprinkle on the parsley, lemon peel, salt and pepper, olives, tomatoes, cheese, and cucumbers.
- Sprinkle Za’atar seasoning blend equally over the top of the hummus.
- Drizzle the olive oil on top.
