These Lentil BBQ Sandwiches are a great protein filled vegetarian lentil recipe. It’s a great marriage between your average Sloppy Joe sandwich and a Pulled Pork Sandwich. This is a quick, simple and delicious meal that is definitely one of our go-to’s in the Fall especially with football season and tailgating. Start to finish, Lentil BBQ Sandwiches take just 30-45 minutes and it’s easy to cater to your audience by changing your BBQ sauce flavor, making it a great lentil recipe for kids.
Cooking lentils is incredibly easy. They cook in just 15-20 minutes in a rolling boil. Brown lentils are an excellent source of protein and can serve as a protein replacement in many different meals. Not only is this meal plant based but it’s also rich in fiber, folate and potassium thanks to the lentils. Lentils are a great choice for heart health and managing blood pressure and cholesterol.

Ingredients
- 2 cups brown lentils
- 5 cups water
- 2 cups of your fav bbq sauce
- 1 yellow onion, diced
- 2 tsp minced garlic
- Salt and pepper to taste
- 6 hamburger buns
- 2 cups shredded purple cabbage
- 2 cups shredded green cabbage
- 2 cups shredded carrots
- ¼ cups chopped parsley
- ¼ olive oil
- 3 tablespoons lime juice, to taste
- 1 cloves garlic, minced
- ½ tsp cumin
- ½ tsp salt
- Optional toppings: red onion, lettuce, avocado, mustard
Directions
- Rinse lentils. Bring 5 cups of water to a boil and add lentils. Cook for 25-30 minutes or until tender.
- While lentils are cooking prepare the coleslaw. In a medium bowl combing shredded vegetables and parsley.
- For the dressing: in a small combine remaining ingredients and whisk until blended. Drizzle dressing over slaw, set aside.
- After lentils cook, drain and return only the pot to stove on medium heat.
- Add to the pot little olive oil, garlic, onion and sauté for 3 minutes.
- Then stir back in the lentils and your fav bbq sauce. Bring to a simmer for 15 mins to let flavors meld together.
- Season with salt and pepper.
- Serve the lentil mixture with coleslaw on whole wheat buns with optional toppings and condiments.
